    Carbonation level of kegged beer

    There are 100 different ways to carb in a keg if you ask 100 brews. I hit mine with 30 PSI and bleed the gas out 3-5 times, hit it with 30 one more time then drop the PSI to 5-10 and let it sit for a week.

    Kegging smaller batches

    It would most likely depend how fast you're drinking it. Even with purging CO2 and the O2 in the air are still mixing quite a bit so you'll always have residue oxygen. If you plan on drinking it slow or bulk aging it, you can check out CO2 transfer to keg if you use glass to ferment in.

    Well if you plan on back sweetening it you have to kill the yeast with potassium sorbate. But then there's no yeast to carb the bottles. So you can have a still cider that you're able to add sugar or concentrate back to or use an artificial sweetener. I'm not sure if lactose would be an option...

    Excellent way to hold on stoppers, airlocks, blowoff setups

    I have a thin piece of copper wire that is wrapped around my carboy handle, I pull it up and over the stopper then wrap the other end to the handle. I'm guessing we all have ways depending what we had on hand at the time.

    Why would my beer cause headaches?

    It is an odd problem. The thing that comes to mind for me is that the brew may have fermented to warm. Did you measure temperature when you pitched the yeast or during fermentation?

    Oncology Nurse 3 days a week, Pool installer 3-4 days a week April-Nov, father, occasional husband... dreams of being a part time brewery assistant in the fall and winter but my wife would kill me and part time and professional brewing don't mix.

    I did manage to pop the bung off the top once. Scared the crap out of me. I was running at 1-2 psi. I think next time I'll have the carboy on a table with the keg on the floor so gravity can work for me.

    Adventures in homebrewing has 5 gal ball locks on sale for $75 that are new. Anyone have any idea on the quality? They are made in China but the site has great reviews on them. If anyone has them how do you like them? Any issues with seals or durability?

    You can try taking some plae malt out for some Munich and mashing at 152. My go to is 90% 20 row, 5% crystal 10 and 5% Munich.
