I'm of like mind. My very first batch I let go for two weeks. I should have let it go another week. Way to sweet and unfinished. Although this brew is at 1.010 I'm going to let it go some more.

I I agree. 5 days is to early yet the instructions states 5 days. But, this forum with it's wisdom made me realize to verify, be patient and let it finish.

Sodium carbonate peroxyhydrate kills bacteria correct? The endgame of sanitizing is to kill bacteria? If equipment is cleaned with hot water and possibly dish soap then rinsed, left to sit in sodium carbonate peroxyhydrate for a time it is not considered sanitized?

Hefeweizen? Will smell/taste of banana depending on the temp it fermented.

My first kit was a Northern Brewer. Citus IPA. Turned out ok. Fermented two weeks. I should have let it go for 3 weeks. All in all I enjoyed brewing I ordered two more fermenters and have 3 different types of beers fermenting. Good luck!
