    Please Help - My beer tastes too sweet/malty

    Why did you move it to secondary with such a high gravity? When I use a secondary it is for clearing the beer and fermentation is pretty much done. I rarely get more than a .001 drop in the secondary.

    I just rinse mine as soon an they are empty with hot water and use a soft cloth. Than I sanatize with star-san. I have two buckets and try to keep them full as much as I can.

    Don't fear the foam!! The foam is your friend. I too have noticed the slick but have not seen any ill effects.

    belgain wits are supposed to be cloudy "These beers are traditionally bottle conditioned and served cloudy. An unfiltered starch and yeast haze should be part of the appearance"

    Very good question because it seems like I always forget to take my reading until I have added the priming sugar and always wondered what effect it has.

    Waiting...

    I have 5 gallons ready to drink, 5 gallons in bottles ready in about 2 weeks, 5 gallons in a glass carboy almost ready to be bottled, 5 gallons in a bucket ready to be bottled in a week or so. I will brew this weekend and have a shipment of new supplies due on Tuesday!!!

    How much lemon zest to use...

    I recently did a Sam Summer Clone that called for lemon zest. It called for 2 teaspoons at 20 mins and an unspecified amount close to flame out. I had 3 lemons zested up. Bet I only used a whole one. when I tasted it at botteling time it was a bit much.

    Think that will be my plan. The beer is getting a bit better every week I leave it in the bottle but not going to use the last 2 cans to brew.

    I brewed a Sam Summer Clone. Bottled after 2 weeks, been in the bottle for 2 weeks but I am going to give it at least another week before i dig in. So that is 37 days.
