    Check out root beer for 2lt brown bottles. Depends on if you have good luck getting the taste out of the little ones though. Just a thought. How long till your keg system is ready?

    Ya, But it does say it's a word! Maybe a poorly used word, but still a word! :) I have a buddy of mine that absolutely cringes when he hears that word and also wal marts with the S on the end. So I make sure to use em as often as I can!

    Check out LHBS if you have one and buy the empty bottles so you aren't wasting some type of drink. Or like cheesy said, buy some type of pop top beer you like and drink your bottles empty!

    I racked to secondary a few days ago, my gravity sample read about 1.024, did you notice this too. It's been in primary for 3-4 weeks. I have never done a beer this big, I know they take longer though.

    The cold crash is taking the whole fermentor when you are ready to bottle or rack to secondary, and putting it in the fridge for a day or two.     Na, 20 hrs is well more than enough time for any disturbed yeast to settle back down. Most likely the pumpkin is the culprit. More time in primary a d a cold crash if able might get you a little better compacted cake.

    I don't know about your recipe, but with Yuri's thunderstruck pumpkin, the longer you let it sit, the more compact the trub gets. Now, there is still a loss of a gal or so. Look through that thread at pictures to give you an idea. Either way, you made beer and I'm sure it will be good!! :)

    I honestly would have to research it a little more as I know very little about mead and natural yeast in it. But the bitterness does sound like an infection. You can ride it out and see what happens. Hopefully someone with more knowledge and experience will come in here and advise you further.

    You can't make alcohol without yeast, plain and simple. If you didn't add any of your own yeast, most likely a mold of some sort(infection) has taken residence, or a wild yeast(doubtful).

    Dry hopping adds aroma and a little flavor, no bitterness. It would help balance out the unexpected higher IBU.

    The greenness will age out, this takes a minimum of 6-8 weeks before the taste really shines. And the later you add the spices, the more pronounced it will be. Try adding them to your bottling bucket. As far as this one getting thick, I have no idea!
