    Finally got around to racking to secondary. I tried a thief sample, wasn't sure at first, by the time I got done racking I had to steal two more samples! Guess I'm going to have to get stuff to make more very soon.

    Well, my first disappointment. Rest of guys enjoyed it, but personally I thought it was dry. We got called out this afternoon and I couldn't babysit it. Turned out ok, but definitely not my best. I think it cooked a few hours too long.

    Another 16lbs pork butt at the station tomorrow. The guys can't get enough. I'll prob do another wet rub and dry rub again.

    I usually take a base seasoning and add brown sugar and anything else I might want. I have used weber garlic and herb. Buff stuff. And mixed my own by dumping the spice cabinet on it. Turned out great, probably never be able to replicate it!

    10lb spiral cut ham. Pretty decent, should have pulled it sooner when temp was 140 not 150. Learn a little every time!

    Kamado cookers thread (green egg, kamado joe, primo etc)

    20lbs pork butt. One dry spicy rub, one wet and sweet. Dry rub wasn't as spicy as expected but still really good. Wet was sweet baby rays mixed with brown sugar, honey, and a dash of apple vinegar. Smoked for 7hrs, wrapped and then back on for another 4hrs. Turned out great.

    Well everyone at the station liked the turkey. Personally I thought it was drier than I wanted it to be. However I started at 350 for few hours and backed down to 250 when it started to char too much. Next time I will start and stay at 250 and wrap it sooner of needed. Still not bad for first...

    Oh logically I agree there should be no effect. But damn if I don't feel a difference!! It very well could be placebo/mental, change in how much I eat/water. No clue. But I enjoy it!!

    I definitely notice a difference, homebrew gets me buzzed quicker. Most of my friends say something about it too. Dunno what it is, I always thought is could be the freshness of the beer.
