    OK, I hate following up on my own post but.. I have a couple more questions :o I bought two packs of safale-04 (just in case) should I pitch both (using the 6 gallon recipe). Lastly, fermentation temp. Does 65 seem about right? Thanks again -JR

    Going to brew this next weekend, since it has such great reviews! Just bought my ingredients... $50 zikes! Here's to not screwing it up :D I'm planning to mash at 152, is there a consensus among you that have brewed this? Thx -JR

    Fermentation seems to be stalled..

    My OG was 1.06, which was right inline with the recipe (no mash temp called out). I calibrated my thermomolator with ice water and boiling water and it was spot on. I aerated by transferring from the boil kettle to my fermentation bucket at a height of 3 feet with a lot of splashing ;)

    I'm definately giving it more time ;) but since my gravity hasn't changed in a couple days I assumed it was done.. Mash temp was actually 154 (after checking my notes) and it did drop a couple degrees over the course of an hour. Question, what does mash temp have to do with fermentation...

    Quick, perhaps silly question. Does hot vs neutral matter when wiring the stc-1000? I seem to find a lot of conflicting opinions.
