    sweetness and maltiness

Sweetness and maltiness are definitely different. Maltiness can come more from your saccrification mash temperatures and overall grain bill / hop balance. Sweetness is more a by-product of unfermentable sugars, like lactose, etc, that the yeasties do not gobble up and turn into alcohol. If you...

btw I'm only getting a 1028 starting gravity from that recipe. did i miss something or was it omitted? did you say that this was going to be a partial mash? if so, that base malt could account for the difference.

I'm a cityboy lifer, but I totally agree with you. Some of best memories as a kid was when my Dad owned a little cottage out Route 2 in Phillipston on Queen Lake - I'd be a total city slicker if I didn't spend every summer up there roaming around the woods. :D More recently, I try to spend...

    Benefits of Multi-Step Mashing

I multi-stepped with a pilsner that I have lagering right now due to concerns about haze and clarity of the pilsner malt. I've read, and heard (kai i think?) that skipping a protien rest with this type of malt/beer will result in a beer that either refuses to clear or takes months to do so. I...

    austin HBS kits?

Just last weekend I popped the keg of AHS Rogue Shakespeare Stout (it was keg conditioning for a about 5-6 weeks) and MAN, it is AWESOME. Spot freaking on. I'm doing a side-by-side tonight, but I could not be happier with the results. One of the best beers I've made......but it makes me wish I...

How hard is it to mini-mash...possibly my third brew

Do the minimash! It can be done with no extra equipment than you'd use to steep grains, all the above links will gove you all th info you need. In my opinion, if you are even thinking you *might* want to some day go to All Grain, minimash is a great intermediate step.

    The complete joy of homebrewing

The more up to date versions have lots of useful updated info like liquid yeast info, updates for the better variety of ingredients available nowwdays, etc. For the price, I'd buy the old one and read it from more of a spiritual/emotional perspective and supplement that reading with...

I need a National League team to "adopt"

The Dodgers are an interesting candidate, they are Red Sox West. But it's LA - kind of tough to root for an adopted team whose (non-hardcore) fans don't even root that hard for them. I get the impression that it's just not cool to loudly browbeat the visiting team's first base coach's monther...

I need a National League team to "adopt"

The logical choice for a Sox fan is to eternally root for the Cubs. We've carried that torch, it's in our blood. It is sooo New England to always realize that there are things to find despair in. The Cubs are this. They capture my despair, and I love them, also.

Yeast Strain To Achieve Massive Farts?

Two months ago, one of my co-workers was having a prolificly gassy day. The things were moving through the office with blazing speed, somewhere in the vicinity of 6-7 feet per second. Carl Lewis farts. Regardless, he was laying one down in a very demonstrative way and something went wrong...
