How many gallons of Cider in 2016

    In 2016, I'd say about 40 gallons.

    Time, pitching yeast to priming

I have left a few batches to go way way long in secondary and had problems with getting them to carbonate in the bottle.

    Time, pitching yeast to priming

I leave it about 2 weeks in primary but I have left it up to 6 weeks with no ill effects, i tend to leave at least a month in secondary and then I add Super Kleer, leave it another week or so, then bottle. Another 2-4 weeks in bottles and I am happy with the product. Some folk on here go...

2 Gallon Batch in a 5 Gallon Fermenter

This won't be an issue in the primary fermentation. As the yeast produces Co2 that will force the o2 out through the valve on top of your fermentor. However, in secondary it's very important to have little or no head space in your vessel as you don't want o2 contacting your cider. Use a two...

Blackberry cider - when to add juice and how much?

Well, it's blackberry season here in Oregon and I was thinking of making a blackberry cider. My question is fourfold: 1. Do I need to pasteurize the blackberry juice to get rid of natural yeast? Will heating do the trick? 2. Do you add the blackberry juice just before bottling or at the...

    Grease spots on my cider

Thanks, jerbrew and CanadianBacon. I did use sugar previously and still saw the oily stuff. I guess time is a good cure, the only issue being it;s hard to ignore 30 22oz bottles of cider sitting in the basement on a hot summer's evening. Onwards.

    Grease spots on my cider

Hi Dave, This is a photo looking down on the top of a glass that I poured from a bottle. This was the dregs of the bottle. The large white object is an overhead light reflecting in the glass - thank god that's not something growing in there. The greasy spotty stuff I'm talking about is the...

    Grease spots on my cider

Hi Dave, thanks for the response. For this cider, I used Brewcraft Pectic enzyme and Wyeast yeast nutrient in 5 gallons of unpasteurized cider with Champagne yeast. It was 3 weeks in primary, secondary for two months, in the bottle for 6 weeks with sugar drops to carbonate. It went into a...

What does your cider taste like?

I'm not a huge fan of JK Scrumpy, either. 2 Towns Cider has some good ones but some are too sweet for me. My favorite by a long shot is a dry cider by Left Field in Vancouver, BC. My own latest is very carbonated without being over the top. It feels great in the mouth. It's Honey-crisp juice...

    Grease spots on my cider

Hello everyone, I'm new here. I've been making cider for four years now and getting better and better. One thing that's puzzled me is the appearance of what i can only describe as shiny grease posts on my cider. Please see attached photo. This has been happening pretty much every...
