Show us your Mead in a photo!!!

Sorry for the crap photo.... This isn't my mead. It is actually a Capsicumel with red chilli from India that a good friend made. Very nice! Fresh honey in the aroma. The flavor is sweet honey with oranges and a unique flavor from the chilli. The heat from the red chilli starts out subtle, but...

Fixing my apricot golden strong ale

It may not necessarily take a full 5 gallon batch (assuming that is the original batch size) to tone it down. You might be able to get away with blending a smaller amount. Say, 1 to 3 gallons... Pour a glass of this beer and dilute it with another neutral beer. Pay attention to the ratio that it...

    My first Cyser

Should be tasty. I make a cyser every year with the Sparkling Pumpkin Cider from Aldi's... I really just buy it for the cool fliptop bottles, but may as well do something with the cider. It's actually just apple cider with pumpkin spice added, but it makes a great cyser.

Fixing my apricot golden strong ale

I think it would take a good amount of back sweetening to make that level of sourness go away. Possibly another situation where the solution would be worse than the problem. Have you tried sweetening a sample to see? The other solution would be to brew a neutral, fruit-free batch and blend...

    Screwed Up Fermentation?

Yeah, it's in the beer. May or may not taste too good now. I just use dry airlocks when I crash my better bottles. On my buckets, it isn't a problem, since the lids don't seal well.. I'm with Yooper. I likely wouldn't want to drink it. Not that it can harm you... It just doesn't sound tasty or...

Thanks for the kind words. I have some other recipes if you are interested. My Oma's Stollen is one. I also have a nice Pfeffernusse recipe. Also, I have a good Linzertorten recipe from a German friend of the family. All goodies from when I was a kid, that I still bake for the holidays..

The second runnings were 1.032... I soured that and then added some DME in the kettle to get it up to 1.060.

    Thought I would share this...

It's been a good while since I posted in the forums, so I thought I would share what I've been up to. I brewed a Quad with a friend yesterday. We pulled an extra 4.5 gallon parti-gyle from the grist. I decided to let the wort sour in a bucket overnight with a handful of unmilled 2 Row. It held...

    Dry hopping in keg ?

I dry hop in kegs often. I use paint strainer bags, and they work well. I've never had a problem with clogging. Something made from voile would be even better..

    Kölsch Stauff's Honey Kölsch

Glad to hear that Brew Dude! I tweaked this years version a little. I simplified the recipe quite a bit. As it turns out a local brewery that will be opening next month wants me to brew it there, so they can serve it in their brew pub. I'm very humbled! Cheers!
