Do you detect any flavor from the AA? I tried it once and I swear I got something like a kids chewable vitamin flavor from it. I don't think I dissolved it first.

You're in the US right? I've had good luck using raw cane sugar for a golden #1-ish type syrup and demerara sugar for the darker stuff. I posted this a while back: left made with raw cane sugar, right with demerara.

I also have 1 year old invert with very little if any change.

Many of the breweries were using proprietary sugars. Do you think they all made them the same way or were both methods used?

My Grandpa retired from the navy in the late 70's. To this day he still talks about how bad the Navy's coffee was, way too strong and thick. Now he makes fairly weak Folger's for himself to drink. :D

Wheat malt should have plenty of diastatic power. Not sure you need crystal in a starter wort though.
