    the formula i use is [(OG – FG) * 1.05] / FG = Alcohol By Mass (ABM) ABM / 0.79 = ABV I've also seen (OG-FG)*131 = ABV They come out pretty close

    OK, so here's the recipe i made up with beersmith for my up comming brew. i'm shooting for an oaked american ale, along the lines of oaked arrogant bastard, but i'm not trying to duplicate it, so as far as i can gather, i needed a high original gravity an high IBU's so this is what i came up...

    If your fermenting in a carboy ... the easiest way to check temperature is with a stick on thermometer .... like the ones you would use for an aquarium. slap that on the side of the carboy, near the 2.5 gallon area so its right near the middle of your beer. thats what i use and no temp...

    how long do you think it will take to ferment? there shouldn't really be a clearing phase or any racking necessary since you used fruit juice instead of actual fruit? i would think once fermentation is done it should be ready to bottle and not long before you can drink it

    ok, so i started this up on sunday, its now in a 1gal bottle, your directions said "Cover and set in warm place for seven days, stirring daily", i have been doing this but ... when you said cover ... did you mean airtight cover? i put the cap on, but not tightly so it would keep dust and stuff...
