    I am not sure how your cook top operates. If it only uses 240V you will be OK as long as the wires are connected correctly to each plug.

    Assuming you did this correctly you would basically just drop the ability to use 120 Volt power. If you do not have your neutral you can not get 120 Volts in a safe method at the plug end. This may be OK if you plan to only use 240 Volts from it. I do not follow your question amperage wise...

    Recirculating wort in boil kettle

    I am thinking it was recipe related. I recirculate before the boil leading up to the boil and also much like you do for a bit during the boil. I have never noticed much of a difference in break hot or cold when I have ummm... forgot to recirculate.

    How do you clean your element?

    I just use a sponge and water, the double sided type that has scotch brite on one side. I clean just after brewing sometimes with a bit of PBW, so far no buildup or issues or anything like the photo above, this includes beers from 1.040 upto the 1.100 range. Cheers
