    So, Thinking of bottling this baby real soon. I have about 4.2 Gallons in a carboy. Brewed last December. For Bottling I was planning on adding about 4 OZ. of Dextrose, and a package of Champagne Yeast. Thoughts?

    Yeah, I built this driying screen in a few minutes. just some 2 x 2 and some screen material nailed to it. took 3 days to get down to 20% of the original weight.

    Black Swan Honeycomb Barrel Alternative

    A buddy of mine gave me one of these to try out. Its a charred stick of wood with holes in it, used for accelerated barrel aging flavor. Has anyone used these? I am wondering how much beer to put this 'stick' in... I was thinking of adding it to a 5 gallon carboy full of Barleywine or Porter...

    It is amazing how much volume 1 ounce of dried hops actually is! I ended up with 2 Lbs of dried Columbus, & about 4 OZ of dried Glacier. Cheers!

    New Belgium's Pumpkick... pretty tasty! The cranberry doesn't drown overwhelm the pumpkin. Great Lakes Oktoberfest... damn good! Malty and delicious. Nice criso finish, not sweet. Exellent brew.

    DOUBLE G DANGIT!! Not only did I forget the spice, (not a big deal as I am told adding a 6-8 oz spice "tea" will be fine) but I did not double the pumpkin puree for my ten gallon batch!?!?! I will definately have to RDWHAHB as I'm sure this will still be an awesome ale! Gonna brew...
