Recipe from my grain leftovers challenge

Anyone want to give me some ideas on what to brew with what I have left in my freezer? I brew 2.5 gallon batches. I have 5 lbs 2 row, 1/2 lb chocolate malt, 1/2 lb crystal 20, 5 lb wheat malt. Just finished an ipa, before that a Belgium wheat, before that a dunkel. Thanks!!!

    First All Grain - Hefeweizen

Thanks for the tips. I took a tip from someone on the forums here who said... "the best hef's are the simple ones IMO, let the yeas shine through. 1 oz Hallertau or Tettnanger 6 lbs wheat DME Wyeast 3068 (WLP300) ferment at about 68 degrees and voila" Wheat DME is not all wheat? Maybe...

    First All Grain - Hefeweizen

Brewed my first all grain last night. I brewed a 2 1/2 gallon batch of hefeweizen. I don't have a lautering tun yet. I just mashed on the stove top, using a grain bag and a big pot. I didn't bother with Ph either. I sparged by holding the bag above the pot and pouring the hot sparge water...

Yeast Starter - Didn't Boil DME

I haven't pitched it yet and I have other jars of yeast I can use. I don't think I want to contribute yet another good story to this forum, so this one ends kinda boring. Playing it safe and starting over. Thanks Lee.

Yeast Starter - Didn't Boil DME

I made a yeast starter yesterday, and for some reason, duh, added the DME to the cooled water instead of boiling it. I guess there's a chance now of contamination? It smells awesome and looks nice, so I think I'm good. It was a freshly opened bag of DME so maybe that is a positive. Would...

First yeast wash results. How'd i do?

Attached is the result of a yeast wash from a 2.5 gallon dunkel. I followed the instructions from the sticky posted here, pretty close. After settling in the fermenter, and pouring off to the quart jar, I let settle again, then poured off to a pint. That's the first pint on the left. Then I...

    Good Heff Recipe

I am also looking for a good Heff to brew. I plan on reusing the yeast from a dunkel I have in the fermenter now. I've got my eye on this award winning recipe, but can't say if it's good or not. I'll probably end up trying it. Check it out (#7)...

    Too much foam/head in fermenter?

I have my first dunkelweizen in a carbon fermenting now. Day 4 now. I plan on leaving it for 3 weeks and then bottling. Usually I filter and transfer to a diff container for secondary, but I've read for this beer it's not necessary. I see the big foamy head at the top with all sorts of stuff...
