    if you "raise" cash, you don't have debt. this is why I mentioned the business plan. where there would be a practice of putting some cash reserves into an investment each year, with the intent of using it along with the returns after it matures to purchase your company outright from investors.

    I just think its funny that a craft brewer who was so adamant about not selling any of their company has now sold half of it. Not sure how a 50/50 split of the company works.

    Whats your process for getting low ph out of these dry sour blends? I meant that as far as using lacto goes, I'm not sure the dry blend works near as well as souring the mash or in the kettle. Obviously pedio/brett is a completely different animal, and I wasn't meaning to compare to that method.

    Couple of good ways we used to mess with people in the office... Our phone system had a way of calling someone within the office, but right before it started ringing, you could put the call on hold, conference in another line, join the 2 calls, and hang up. Both lines would be left ringing...

    I think I would probably just have put it in my back yard just for the peace of mind in knowing they aren't playing right near the road.
