    Man I make 5 gallons of this stuff every couple weeks, trying to get a pipeline going so it can actually age some. Around here it gets aged in weeks, not months, I don't even know how good it is when aged cause the old lady likes it so much sweetened and carbonated at any age.

    You should be fine, it will have a little less alcohol and perhaps a bit less "body" than with more DME but I'll bet ya it will be a quite drinkable brew and you'll be happy with it.

    Racked my wine to a secondary, added my peach juice (finally found it) and some oak chips. Took a test glass just now and hell, this is good damned wine. Little bit acidic in the bite but it's quite drinkable I'd say. Gonna get a small glass again in a week and see if my oak chips impart any...

    No doubt this is probably the case, my latest batch of apfelwein has an sg of 1.111 so it should be quite rude when it's done fermenting.

    The big problem is when the moonshiner doesn't mix all his runnings together, if you simply set out 50 1 gallon jugs, jug #1 could be dangerous, but if you mix them into a 50 gallon drum then dispense 50 1 gallon jugs from that, the bad stuff is diluted to the point of non-lethal levels.     Hmm I don't remember exactly but it was at least several weeks, they've been in the freezer in a zip loc baggy for at least a year now. I can get some fresh chips at the the LHSB I mean they're not exactly an expensive item to go cheap on or anything :)

    Stupidest thing said about distillation also (sorry had to throw that out there) most of the deaths/blindness is not the shine itself as much as it is the silly crap people have used to cook the shine IN, car radiators/etc or added to the shine later to fool people into thinking it's stronger...

    Vigorous indeed, SG today is .996 and I'm no sommelier but I think it's fairly acidic. Not undrinkable, hell I'm polishing off the test tube I took for testing with out any real scrunchy faces being made. Guess I'll rack to secondary in the next few days on top of this handful of white oak...

    Yeah making anything for personal use, whether's a little toke, a little smoke, a little drink, or some shots of something stronger, shouldn't be illegal, selling it of course amounts to tax evasion regardless of the law.

    Can anyone find a case anywhere of someone in Alabama getting popped for JUST homebrewing as in homebrew is what got the LEO attention to begin with and homebrewing was the only "crime" they committed? Just curious really.
