    This is what I did with the monstrous 16.5% abv batch I made. Sweetened it with about 3 pounds of sugar then kegged it, and the old lady was wondering why she kept falling asleep in front of the tv after only 2 wine glasses full in an evening.

    Smoking a whole duck this weekend, gonna start it tonight and do it low and slow over plum wood for about 15 hours, gonna shove an onion inside the duck so it'll render out with the duck fat giving me a base for some gravy that should rock the house, might throw some sliced mushrooms in there...

    This sounds like something I'm gonna have to try. I have an unhealthy obsession with making things as powerful as possible. Hmm a 20+% abv apfelwein carbed up like champagne and sweetened before kegging sounds like a good sneak up on you and kick you square in the ass kinda drink.

    Sweetening it a bit before carbonating it really brings out the apple, it's almost like fizzy apple juice after that. And it drinks down like a fizzy cold drink, way too fast and before you know it you're drunk.

    It's what everyone around here bugs me for the most, more of that "apple champagne" sweeten it, keg it, and I'm lucky if it even carbonates completely before it's gone.

    Bottle it up, sit it in a closet and forget about it for a while, who knows how it'll be in 4 or 5 months. Or find someone who likes their beer a little sweet and make a gift out of it. Or cook with it, an overly sweet brew would probably make some killer pulled pork or bbq ribs.

    I got tired of the constant temperature battle several years ago and bought one of those digital controlled electric smokers from Lowes (about $300) and the quality of what I was able to smoke went up exponentially. It felt like cheating.

    Scored a box of peaches for $5 this week, all of them were bruised and/or overripe or just ugly, but I got nearly 2 gallons of juice out of them.
