how much LME and how much grain? 1.061 sounds a mite high for a Kolsh, but hey, maybe you could dry hop it and call it an "Imperial Koelsch." :D (sorry am on an Imperial anything kick these days)

    thoughts on latest brews...

Just tried the goulash beer. It is the best beer I've ever tasted. Were it just a little clearer I would enter it in a homebrew contest; and it's only been in the bottle for 5 days!!! It is only lightly carbed so far, but more so than I expected. Even with all the recipes that i've...

Up next (sat a.m.) Imperial American Pale Ale

temp control, and for the first time I will try to recirculate the grain tea back through the grain a few times before sparging with water. I am hypothesizing that the steeping grain will filter out some of the junk that causes cloudy beer. We shall see if it works. I'll report back.

    thoughts on latest brews...

so my brewing has gone a little haywire lately... I made one Munich Dunkel, but as an ale, with California V yeast, and overdiluted in it primary. It had only 1.043 corrected OG. FG (after primary fermentation) was 1.015. :( So I put about 1.5 cups of brown sugar (in solution) into the...

How much airlock activity is the norm

I have to drink mine green as heck to make enough empty bottles for the next batch. I've bought more secondary vessels, but I still run out of bottles (and I have at least 150 grolsh bottles....).

using secondary = longer to bottle carb??

I bottled my first batch of beer that had spent time in a secondary. The beer is VERY clear, with almost no sediment in the bottle. However, while tremendously clear, the beer is also tremendously flat. does allowing the beer to settle in secondary delay the bottle-carbonation? most of...

How many hydometers have you broken?

I asked fo ra more rugged one at the local HBS, and they told me that they had the option of carying the unbreakable ones, but they ony cost like 2 dollars or so. So they decided to carry the expensive ones that break every two weeks. AHhahahahaha!!!! The first one I gently tossed while...

so what happens when you don't sparge gently?

I am doing 5 gallon mini-mash + extract boils now, so I am steeping for 30 minutes at about 150-155 in the first 2.5 gallons of water, and then putting the grains (in thir bag yet) in a collander in the top of my brew kettle and sparging with the other 2.5 gallons that I had been warming to...

***need help quick how to raise ABV?***

well, I boiled up a cup and a half of organic brown sugar in a cup of water, and added it to my secondary, alonf with 1/4 of an oz of Hallertau hops. it is fermenting now, and I am a little worried that it might push the hops (which all live in the neck of my carboy now) up into my stopper...

***need help quick how to raise ABV?***

I have a fouled up Munich Dunkel that I made as an ale. I put a little too much water in my primary, and ended up with 5.5 gallons. my OG was 1.043, and now it is 1.015. it has not bubbled in the airlock for 2 days or more. I want to rack to secondary and see if I can raise the ABV a...
