    Want to make a Dark IPA

    Burner

    I use a Bayou Classic SP10 ($50 from Amazon; free shipping too); takes about 25 minutes to go from tap water temp (around 70-80F) to boiling. It works just fine for me If you've got the money, the Blichmann Burner ($150) is considered fuel-sipping and top of the line

    I use plastic buckets. I can't see any problems unless you're aging 6 months or more

    How to manipulate ABV?

    Just wondering, I've found a beer I love, but I'd like to be able to drink more than 1 or 2 pints without being rocked, so next time I'd like to lower the alcohol. Is there a way to alter the alcohol without changing the taste? Do I just tinker with the sugar?

    Go with 6.5 - the CO2 given off by the yeast is more than enough to fill that space. I've currently got 4 gallons in a 7 gallon carboy, and 3 hrs after I pitched, the airlock was bubbling merrily away

    Straining wort after brewing?

    I picked up a few mesh bags from my LHBS; I use them all the time when racking from the kettle to the primary and I'm always amazed at the tons of trub they pick up. Great aeration too

    How do you mark your fermenters?

    They sell a chalkboard paint at home depot/lowes. I've been kicking around the idea to paint a 1x1x1 partch/area of my fermenters with it, then I can just use chalk to mark what's inside
