    You probably won't need a blow off tube, but be ready for it all the same. And make sure to boil your top off water ahead of time.

    Just make sure your cold water has been previously boiled and I think this is okay. Haven't tried it myself though.

    I think the sour note your referring to is pretty common for Sorghum beers such as this. My thought to help prevent this would be to steep some roasted quinoa or something in your brewing water first to help balance out the final flavor...

    PattyC, If you come up with a good way after kilning/dehydrating to remove those shoots from the groats please let us now! I have malted my own buckwheat once before (beer is currently priming in bottles) but I barely "deculmed" at all cause I got lazy. Not sure what negative impact this had...

    Brooklyn Brew shop kits

    In a retail setting I don't see how you can do better than these right now. Experienced brewers won't need them, but that's not who it's for. For a first timer these blow Mr. Beer out of the water. Plus they look cool in a shop I think.

    I'm pretty sure that for a beer at this stage both flatness and a large head are signs that it hasn't had enough time to fully carb.

    Turning the heat off is correct. Monitor the temp as time passes, but you will be surprised by how well the whole concoction holds it's temperature.

    Looks to be worth a try for me. Just make sure that cold top off water you add has been boiled at some point first, and otherwise treated as your brewing water (run through a brita or whatever). Always get nervous about forgetting that!

    I'm not an expert but I think keeping your temps down will help. Also you used a lot of high alpha hops there, using true aroma hops for your later additions may help balance your beer out.

    I use the campden tablets plus run it through a brita, o yea and boil it. Do all that and you should have no problems.

    There are actually two cats in question which presents even more of a problem. I also don't doubt the ability of either to extract the bung in their routine frenzies. I was thinking some electrical tape for extra support before I actually send one or the other out the window, but we will see...

    My stinking cat knocked the airlock of my carboy in the middle of the night. On third day of primary. What are the odds you guys think that this becomes a problem. Don't blame the cat, live in small NYC apartment, this was bound to happen haha
