    Revisiting My Classics

Great thread, love reading it. I had a question about your apple jackhammer, how did you add the apple flavor and how much did you add? I'm trying to do an apple wheat and can't decide how much to add. Thanks

Setting aside bottled home brew for long term storage

I do the same thing, I have a 6 pack of every beer I've ever made stored in my basement. Every once in a while I pop one open from a previous batch. They all taste great with the exception of some of my older wheat beers. The wheat beers just don't keep their flavor like the others.

The guys at New Belgium are pretty cool

I was able to tour the brewery last week, what an amazing place. They really take everything to the next level. At 1 year every employee gets a bike and at 5 they get an all expense paid trip to tour Belgium breweries (and they get paid for 40 hours of work that week!) I put in a similar...

is there a beer I can have ready for super bowl?

I had a similar situation and I made this recipe and served it at a party exactly 3 weeks from the brew date. It turned out great, actually one of my favorite beers I've brewed. It was gone in about 3 hours at my party, I guess everyone else liked it also.

    Coffee Stout Formulation Suggestions

Don't be scared of using coffee beans in your secondary. I did a clone of Terrapin's Wake N Bake like chefchris is talking about. I used 4oz of ground beans in the secondary for 24 hours, I put them in a grain bad/paint strainer, mine floated on top so i was able to just pull them out without...

    Best Amber ales

I just had Bell's amber ale and it is fantastic. I like a maltier beer and they do a great with theirs. You should even be able to find it down there in the horrible neck of the woods that you live in!

I couldn't find any info on their website about their tours. Do they have a set day and time?

    Midwest Brew Tour

definitely hit up half acre, i live nearby and have already been three times since they opened last week. they give tours on fridays at 5pm, but are supposed to start doing tours on saturdays soon. even if you don't get there on one of those days, you can always stop by and say hi. their...

Tried my second brew: Cherry Wheat Ale

give it a little time. i've never used cherry, but i had a blueberry ale that i just kept adding extract to because i couldn't taste it. after it sat in the keg for a few weeks i could really start tasting the blueberry and before i knew it the blueberry flavor exploded and ruined the beer.

    Sweetwater motorboat?

I'm so jealous. I just moved from Atlanta in the spring and I'm really missing the sweetwater. I'm still trying to find a way to get it up to Chicago. I took 3 cases with me when I left and I'm running dangerously low.

    After boil is done....?

I usually just dump and let everything settle out in the primary. However, I just made a pale ale that I wanted to see how much I could get it to clear up so I let the wort sit for 30 minutes then siphoned into my primary leaving the trub and hot break behind. I haven't served the beer yet to...

    Need a yeast starter?

+1 on what Revvy said. I know it can be a little intimidating taking on extra steps for your first brew but I think it's a great idea. It's a 20 minute process that can give your beer a great start. I didn't start making starters until my 6th or 7th batch, I don't know why I waited so long...

    Milwaukee boat tour

Thanks for the tips. Was it too crowded? It says a max of 70 people, which sounds like way to many for me to enjoy myself.
