    When my PID says 212 (which I trust), and the surface of the kettle is erupting, then my boil timer begins. But normally I already have some FWH in the kettle, which I highly recommend.

    What do you consider an arm and a leg? Many places are under $10 flat rate if the total purchase is under $50 or so, and it's free shipping if the total purchase is over that amount.

    So you lost about 3 gallons on the floor? I assume you were targeting at least 6 gallons in the kettle pre-boil, and if you lost most of the first runnings then your current SG in the kettle is probably pretty low -- did you take a reading? I don't think 1 pound of DME is going to solve this...

    Regarding the water profile, I would target something similar to a Helles/Pilsner around 50 ppm each for Ca, SO4 and Cl. And Mg and Na <5ppm. And CaCO3 as low as possible.

    I haven't used that toffee flavoring, but Jasper's has been my LHBS for a very long time and they are fantastic. You could test the flavoring dosage on a small sample prior to dosing the whole batch. The recipe calls for 2 oz. of flavoring for 5 gallons. So that's roughly 60ml for 5 gal. or...

    Maybe 3 oz. Saaz at 60, 2 oz. Hallertau at 10 and 5, and 2 oz. Crystal at flameout. That's about 26 IBU's total.
