    Give it time and it will all settle out. How does cold crashing affect carbonation if you bottle? Is enough yeast left in suspension to carb up?

    OG way too low

    I'll bottle this week and call it good. The sample I had was pretty tasty so I'm sure it will be fine. Next batch will be my first full boil so I shouldn't have the same problem again.

    Hadn't thought of that. I test it tonight. I took a reading over the weekend and it was at 1.016 which is where it should finish out. It tasted pretty good but that gives it a whopping 1.3% ABV! I guess it will just be a good session beer.

    Brewer's Best Belgian Wit + 1 lb of honey

    If I remember right, honey can take longer to completely ferment out. I would take a gravity reading before doing anything else. A friend gave me a bottle of a Belgian he made with honey. A month later it exploded. After the fact he told me he probably bottled it too soon and the honey kept going.

    I just brewed up a Brewers Best American Pale Ale kit and my OG ended up at 1.024 instead of 1.051. I'm not sure what went wrong.     Taking a "clone" to a brewing competition...

    I would think an "in the style of" disclaimer should suffice if you really wanted to. Or just add an extra 1/4oz hops somewhere and you have your own recipe.

    Relax, you are fine. I wouldn't bother with a secondary, never have. Your temps sound fine. The airlock is not a reliable indicator of fermentation. The hydrometer is.

    I've never bothered to hydrated dry yeast. In fact, I think the packets say to just dump it in. I usually aerate before and after pitching.

    That's what I do with my grain bags, too. I guess with the large nylon bags you could use one to steep the grains, take it out, and then put in another for the hops.

    Re-using yeast

    I haven't saved yeast yet, but I have racked right onto a yeast cake. I would only suggest it if the two batches are similar. I've also read that this should only be done once, maybe twice. Stresses out the yeast or something like that.

    LME or DME

    All my previous batches have used mainly LME, maybe only a pound or so of DME. But last week I did a Gumball head clone that was all DME.     I do 3-4 gallon boils. I've always steeped in around 2-3 gallons and then heat another gallon to temp in another pot. After steeping is done I put the bag in a strainer over the large pot and pout the extra gallon over the grain. Then boil away. Is this overkill or am I pulling out extra tannins...

    to boil or not to boil?

    Add it later if you want a lighter color beer. It will affect your hops though. If you are using a kit, they would have accounted for it.
