    Earliest Time it is "Acceptable" to drink on brew day...

    I've been known to have a nice oatmeal maple porter with pancakes and bacon... The local diner has also said that if I ever want to install a tap there they'd be happy to offer a Breakfast Porter or Stout. It's better than a Bloody Mary...

    Stout from grain to glass in a month?

    Shouldn't be a problem... I did a Vanilla Bourbon Stout and sampled the first few at 5 weeks. Just had more today and both were very good with no noticable taste differences between the 4 and 7 week mark. Good Luck to ya!

    I've been looking into doing a gruit brew for the spring so this thread is one I'll follow. So far I've narrowed it to an Irish Red base adding some yarrow and mugwort in place of the hops... I'll post when I finalize. Good luck with your brew...

    Hop replacements

    Not yet... but all evening I've been reading about Gruit Ales. The primary herbs are sweet gale, yarrow, and wild rosemary... I'm tinkering w/ a Scottish Red recipe now and planning a trip to a local herb farm for tomorrow.
