I did this 5 or 6 years ago, used two 220v elements. Worked great. I changed my set up to welded tri-clamp Ferrels. I did mine for distilling. I dunno how fast or even if you will get a boil with that element, beyond my knowledge and/or experience.

I am using a different freezer. However I would suggest setting to to the coldest setting and using a temp regulator like the Johnson A419 or the inkbird 308. This will keep the temp regular at your set temp by kicking the compressor on and off as needed.

That is a great idea. A cheap hand crank seamer. I have seen old fashioned hand crank seamers, and even oktober offers a hand crank version. But they are still 800$+. If you can make one, market it, and then keep up production I think you might have something.
