    Starting to brew, hopefully start batch in 2 weeks

    IMO when doing an extract batch the simplest way I have found to cool down the wort is to use cold water from the fridge, or ice if you trust your supply for topping off.

    +1 I did the same thing on my first batch of mead, 1 gal batch in a carboy only had 1 stopper. I have since learned that a 6.5 fits just a nicely in a carboy as a 6 but is less likely to be pushed through.

    If you just use the RO water it should be fine, will still have trace minerals, the DI resin removes all the trace minerals so you can make your own custom water profile for the aquarium.     IncredibleMulk If you ever make up to the Albuquerque, there are a couple of stores that I can point you at, my first recomendation would be Victors Grape Arbor. But Lubbock is most likely closer, and I think there is a store or two in Los Cruses but not sure on that one.

    Significant color change during secondary fermentation?

    New at beer and could be way off, but most of my wines do that, is most likely just the yeast settling out. If you watch that lower section of lighter color with all the floaties in it will get smaller every day till its all clear and dark.

    I suppose its possible, but most things that can hurt you cant live in sub freezing temps so the ice shold be mostly sterile. Also I dont use store bought ice, I have my ice maker in the freezer hooked up to my RO system so is the same water that I boil and top off with. I also add water...

    Filtered Water

    For me, my tap water is not drinkable IMO, but I happen to have a 5 stage RO\DI unit for the salt water tank, so I use that, just dont use the DI stage as it strips all of the trace minerals out. I was just happy to find another use to justify the unit lol.

    First Brew: DME & LME Addition Question

    For partial boils, which I do, putting around 7 lbs of ice in your primary before adding the wort will bring it right about to pitching temp when the restof the water is added. Plan on getting a chiller when I move up to full boil / AG.

    +1 I brewed a red ale last week and used half DME and half LME, added half of each one at the start and that last 1.5 lbs of DME did not want to disolve, Next time I will put all the dry in at the start, and add the LME towards the end to keep the color light.
