    The problem is you have to shake it vigorously in wort to fully dissolve, thus introducing a lot of O2, so I'm guessing that's why people do it towards the tail end of fermentation. This is why I have not tried it yet. If anybody has good techniques/experience, I'd love to hear...

    Gonna sneak in one more brew before the new year since I have some time on my hands. Gluten free all grain IPA with SImcoe, Citra, Centennial and Columbus, which has kind of become my house IPA.

    Another new beer...gluten free IPL with Strata, Citra & Amarillo. This was my first time using s-23 (fermented cool). I'm not loving the overripe fruit vibe it's giving off. I basically tastes like a kveik beer right now. Hopefully, it will mellow a bit.

    Last brew of 2023 will be a SMaSH utilizing HBC 1019 and a brand new rice base malt. Gonna ferment with Verdant on the cooler side to keep the esters in check.
