    No worry. I had my Pale Ale in the fermentation bucket for 2 months b4 I had time to put it in my keg. It came out perfect. I'm not saying aging makes it better, I'm emphasizing that if my experience didn't go wrong, you don't need to worry about your delay in bottling.

    ?? You are using 3V keggles, don't you know the limitation of 15 gallon kettle?? Not saying that 15 gallon kettle can't handle 10 gallon batch with 5-7% ABV. Just wondering why you are asking a question which you have had the experience already.

    Turn the fridge on, feel if the freezer partition is cold. I guess that only the top (ceiling) of the fridge is cold. I would just cut the partition out if I were you.

    BIAB kettle question

    You need to test and see how much temperature would it drop after 60 minutes mash using hot water only, not with grain. To keep the bucket warm, you can put the bucket in a tub or a bigger plastic tote which is filled with hot water as well. Do you get the idea?

    Find a recipe first, then scale down to your system. Your batch size is limited by your boil kettle. You may not be able to make a 2 gallons batch with it. Just for boiling wort, you need to factor in your boil off rate, and you can't have 3 gallons of wort to start with because of boil over...
