    Is my beer infected?

    Its really hard to tell how the beer is going to taste at two weeks in the bottle since it hasn't had time to condition. Just give it some time. I have tasted an amber at 2 weeks and was very worried that it was way to bitter but at 2 months my concerns were gone cause it was delicious.

    Don't dump it! It might just need more conditioning. I had a raspberry blonde that started out very tart, not sour, but that mellowed out after some time. Time can fix a lot of things so put them aside and try one in a month or two and see where its at.

    I don't know why but I never thought to soak in vodka before, i like the idea of the flavored vodka too. I have done this with vanilla and cocoa nibs. I once soaked 1lb of nibs in 750ml of vodka in 3 mason jars, dumped the nibs and the vodka into a 10 gallon batch of chocolate milk stout :D

    You might check your gravity to see if it has changed since your last sample, smell and taste. If gravity hasn't changed and everything seems good then I would go ahead and bottle.

    Hey tkely, once you have reached fg I would rack your brew onto your berries in a secondary vessel. I did 2 weeks with 7lbs and it had a nice taste but I have upped it to 10lbs on other batches.     I think you are going to be fine. You can also use the orange carboy caps if you have one. Cap the one hole and run a blow off from the other.

    What I did for beer today

    Decanted 2 2000ml starters and transferred to mason jars for tomorrows kolsch. Picked up some extra hose to add a pre chiller to tomorrows batch since it is going to be in the triple digits . Today was 106!!! Stay cool!

    High Fermentation Temperatures

    That's a bit warm. My first year I got a big plastic storage bin and placed the carboys in there with water and 2 frozen 2L soda bottles. Make sure to have 4-6 bottles so you can swap frozen bottles at least twice a day. Might be a pita but its worth it. Good luck keeping it cool!

    What kind of berries? I would not add them to the boil. Fermentation will scrub out flavors and araoma of your berries. I have always added fruit to a secondary fermenting vessel and racked the fermented beer on the fruit. How many lbs do you have? I have had good success with 1-2 lbs per gallon...
