I typically brew at night, I start right after work and am done before midnight, peaceful as can be, if I time it right I can get a run in during the mash too.

If I over sulfate I get a sort of sharp minerally quality, it's pretty readily avoidable though in my experience... Just don't bring your sulfates over 400 ppm.

Summer Friday! The pils was too sweet and lacked that lovely pils grain flavor, but Nimble Giant was on point. Ran 8k, shopped for food, hit the beer store and grabbed grains for a beer at the lhbs... I'll be in my hammock for the remainder of the day.
