I've been meaning to try making a sour stout for years now, so I'm thinking maybe my standard stout recipe, but sub in carafa 3 for the roast malt, and then dial the ibus down, pitch my house culture, and age on oak cubes for a bit.
Pulled gravity samples today the wyeast 5 gallons has way too much sulfur (artifact I sometimes experience when spunding, may dissipate, or I may plate filter it which seems to really knock it down) the wlp half tastes great and is 9.1%, but I'm concerned that it may not be done so I'm force...
The only downside is going to club brewdays... I solved that by keeping one of my burners and getting a bag.
Can't recommend it enough, especially if you're reasonably comfortable with reasonably high powered circuits.

Sure you could get a co2 calibrated MAF sensor on eBay, mate it to your gas outflow and do the math based on those readings. I actually have one that I've played with a bit that emits readings via a serial port... I think it cost me between 5 and 10 bucks. I love old industrial surplus.
