    Not using a RIMS tube, but I understand your point to be: Let BS suggest a strike temp, mash in, let everything settle for a bit, start recirculating, and pay attention to the MLT temp, not the HLT temp. Here's a pic of the rig. First brew on it next weekend.

    If you build a panel around the power supply as drawn by @doug293cz, just bear in mind that with the abandoned neutral, you will need to source everything you use as compatible with 240VAC. A regular 120v Chugger pump, for example, will not work.

    Here's one source: https://www.alphanovatech.com/en/naturalcone.html that doesn't favor top or side, as long as the air can move across the fins. Still, it recognizes that airflow plays a part.
