    Oops, potassium sorbate. What next?

I may be wrong, but I've heard heat can breakdown the sorbate, but if you have already pitched, that would kill your yeast too. Sent from my iPhone using Home Brew

    No Nonsense Stout

I think I missed something. I thought you cold brew, then add 8oz of that cold brew? Instead it seems you use a half pound of grounds in 2 gallons? Please clarify...? Sent from my iPhone using Home Brew

I like this time at night on HBT

To varmint and pawn, all I can say, is that with my financial obligations (sick wife, sick mom, and 2 mortgages) I would love to spend a few weeks doing 16 hour days 6 days per week. Last time I voluntarily took time off, was coming off of a job that ended with a 27 hour push to finish. After...

    No Nonsense Stout

So... It is bottled now. Got 6 1/2L bottles and a decent size tasting sample. I think I went as far as "breakfast beer" with that coffee addition. As I said I typically drink it black, but it almost tastes more like coffee than beer. Also, I used a light roast coffee (my preferred coffee) and...

    No Nonsense Stout

Next time I make it, I will be doing that way. But I typically drink my coffee black, so I'm not expecting it to be too much for my taste. Btw, I was a slacker and didn't bottle yet. Sent from my iPhone using Home Brew

Pappy`s Pub Cider - Award Winner!

Second 1G batch in primary. Measured more carefully this time. Used 2# Demerara sugar. OG 1.124 Red Star champagne dry yeast again. Sent from my iPhone using Home Brew

    No Nonsense Stout

Ok, gave up on waiting for it to settle, cracked open a bottle, it poured pretty easily, the stuff stayed in the bottle. Didn't have much of a head to it, but that's fine. I have 1/2L bottles and 16oz glasses, so not really any room for a head anyway. Will probably bottle the coffee variation...

Clarity-Ferm, Gluten Testing, and Gluten Sensitivity

Unfortunately the "GF fad" has gotten a lot of people poorly informed, and with the band wagon situation there are a lot of people (including my brothers girlfriend) who seem to think we are faking it. Got in an argument with the manager of Genghis Grill in Waldorf md who refused to cook our...

Please Report Reactions to "Low-Gluten" Beers to FDA

I realize this next comment may get me tarred and feathered... But Red Bridge Ale from A-B isn't bad. I like it more than I ever liked other A-B stuff. Also dogfish head' tweesan ale is... Available. It is primarily sorghum but has buckwheat honey as well. It had a fruitiness to it that I...

Clarity-Ferm, Gluten Testing, and Gluten Sensitivity

I skimmed it. 11 pages is a lot to chew on right now. Seems TTB is intending to be more strict than FDA if I read correctly. SWMBO will probably read the whole thing tomorrow. However, while it does have language pertaining to "gluten reduced" beers vs naturally GF, I don't see it covering...

    No Nonsense Stout

So, I re-racked the coffee addition, and moved the bottles to the fridge. They are still settling out, and some still have obvious sediment floating halfway up. What should I have done differently, or what should I do next time to prevent this? Or is this part of the deal with the oatmeal etc...

Pappy`s Pub Cider - Award Winner!

Mine bubbled for close to a month, stayed around 65* F. Also, only brewed a 1G batch. Got stuff to mix up another batch today, but first started my mead varieties... Only to find I ran out of air locks! Perhaps I'll need to detour to LHBS tomorrow on my way home from work. Sent from my iPhone...

Pappy`s Pub Cider - Award Winner!

They both sat out for about 2 hours. I used 2 PET bottles each and squeezed them until they had firmed up, which the ginger did, and the cinnamon version did not as much. When I fill, I typically squeeze them to get a little better idea on the amount they have carbed. I did not pasteurize...

Pappy`s Pub Cider - Award Winner!

*slowly opens one eye* Had first bottle of each of two versions I did (1 ginger, 1 cinnamon) last night. Pardon my language, effing yum. Neither carbed up a lot, with the ginger being slightly more, both are comparable to moscatos I've had. I will probably keep a gallon brewing at all times...

    GF lager brainstorm

Well, given my brother's taste, thin might be good. I know I've seen him with their light beer in his hand before. For my taste.. Big is good. So I probably will bump up the fermentables and just water his down :-P Sent from my iPhone using Home Brew

    GF lager brainstorm

From what I've seen, hop heavy brews seem to be more common in GF recipes, typically to mask the sorghum flavors. I don't have any links handy, but they are out there. Sent from my iPhone using Home Brew

    GF lager brainstorm

Thank you for those recipe links but they both defeat the GF mission I am pursuing. I am also not set up for all grain yet. I have read many of igs' posts and picked his brain a time or two. He has been quite a help to me. *raises a glass in the general direction of Seattle* Sent from my...

    GF lager brainstorm

Ah ha! This is why I ask questions of the more experienced members. Will the extracts meet those needs or do I need enzymes too? Sent from my iPhone using Home Brew

    GF lager brainstorm

It's cold outside. Other places around the country, it's really cold. Others, incredibly cold. It's lager making weather! First off, I have been thumbing thru various lager recipes on the interwebz, here and elsewhere, and I am trying to settle on a decent lager recipe. It's compiled from...

    Brewers Best Gluten Free Ale

FWIW I have a batch of what otherwise would be Igs' no nonsense stout, and it seems to have had no carb problems. I haven't opened any yet, but the plastic bottles are nice and hard. Sent from my iPhone using Home Brew
