    Your approach to beer maturation?

    For a "normal" gravity beer - I ferment in primary 3-4 weeks. Then let it sit in bottle for at least 3 weeks before I let a friend try it.

    One thing - you don't need a 3 gallon carboy for a half-batch. You're current carboy will work out just fine if you choose to go that route.

    Also - if you haven't calibrated your hydrometer you might want to do that as well to verify your reading. But definitely you are looking for stability as well.

    Filtering question (easy)

    Don't know what you are seeing - but the sludge at the bottom of my bottles is due to yeast settling after carbonation. And I need the yeast to carbonate beer in the bottle.

    priming sugar concern

    The good news: you don't have to worry about the carbonation level. If you used the right amount of sugar the length of time you boil doesn't matter. The bad news...well...there is always the risk of an infection. You just increased the risk is all.

    Did u try using your nose? Lol. Really - sniff around the fermenter for yeasty smells.

    +1. Now is a great time to retreat and add a blow-off tube. You don't want to wake up in the morning with a stuffed up airlock and yeast ALL OVER!

    The real problem is gonna be this: it will be the best beer you have ever tasted! And you will spend years trying to duplicate the recipe ... And never will! Lol.

    One last note. You are much better off with brown bottles. If u use the green then the beer should always be kept in the dark - otherwise they say u risk skunking the beer. Yeast don't like light and they will punish you! lol. Hope u enjoy the brews to come.
