    Compost bucket sour?

Yeah, agreed with something simple. I just did a blonde/golden sour and decided to do 100% English Pale Malt. It turned out extremely well! Just over 6% and just enough malt profile to be interesting. I say try aged hops and lean into the funk, but that's my taste :) If you need some then I...

    Swing-top gaskets

I've seen Grolsch swing top 4-packs around Chicago for a couple years now I think. Longnecks for roughly the same time. I buy it sometimes to store harvested yeast under. Hopefully they're not just phasing out the swing tops. I'm not sure they'd move to 4- packs just to phase it out.

    Swing-top gaskets

I definitely ran into some of the issues Mac mentioned. Was one of the final pushes for me to go to kegs. I'll own up to plenty of user error. But if you go with the swing tops it just probably makes sense to keep in mind. Don't expect everything to be interchangeable and work seamlessly.

    Compost bucket sour?

Seconding that! I was just thinking about bumping the thread to see how it's going. Glad to see the updates and looking forward to more.

    Sediment in bottom of keg.

There isn't one exact answer for this. There is some general guidance but you'll have to read up some and figure out the best order of upgrades that works for you. It's been over 10 years since I last used a Mr Beer but I remember that barrel fermentor being pretty rudimentary. Upgrades to your...

Absolutely you can pitch BE-134 into the amber ale kit! It will taste different than the original recipe, of course, but there is no reason to believe it will be bad. In fact, I think it would work pretty well. I would definitely prefer that to fermenting US-05 at 78F. Your thought to ferment in...

    Sediment in bottom of keg.

Yeah, that's what I was envisioning. You could probably make some updates to your process to improve the overall beer quality, but you don't need to worry about that right now as you're learning. Once you have more experience you can update your fermentation equipment if you're enjoying the...

Sorry, didn't mean to assume :) Still probably close enough here, I think.

    Sediment in bottom of keg.

No problem! Sounds like there was a good chance fermentation happened then. Like you said, you'll find out. No reason to worry yet. Report back and let us know.

    Are these bubbles normal?

I agree with @brewSJ that it looks like an infection. You can just taste it out of the fermentor. I would probably open it to taste and then just decide if I wanted to bottle. If so, then just go straight into bottling. Any unenjoyable flavor means it's ruined. If you like the taste, even if it...

    Sediment in bottom of keg.

You probably haven't been around long enough yet to know :) Mr @Clint Yeastwood is being sarcastic. Helpfully sarcastic, but sarcastic 😂 The amount of sediment is fine and very normal. If it's neon yellow then maybe I'd be concerned. Dull yellow would be fine. I assume it's in bottles...

BE-134 is a great yeast to start! It makes a really nice, easy drinking saison. Plenty of yeast flavor without being too overboard. It'll do great at 78F. If you like it then there are many different saison yeasts to try. Pretty much all will be fine at 78F or above. I'm up for the window AC...
