Sorry for not getting in touch sooner. I see it is taken. Sorry again, hate to be "that guy!"

Sorry guys, I'm totally not going to be able to make it tomorrow. No way I can make it to Bill's, pick up, and make it out to Lombard by 11 and make it to her soccer game afterward without driving her crazy. I'll pick up on Sunday and we can hopefully re-arrange for sometime during the week or...

K, I'll pick it up for you. I'll be out at the Lombard skating rink from 11a - 12p for my daughter's lessons if you can make it there. That is, if I can pick-up early enough on Saturday - might be a stretch with a rambunctious 8 yo.

I could possibly pick up for your, adriedel. I think I'll be picking up for someone in Wheaton, too.

One food you have never had... but are curious

Ostrich is pretty lean and can dry out pretty easily when cooked. Kangaroo is somewhat the same, although I only had a sample. Alligator is great - really almost like dark chicken with more of that "gamey"ness to it. I haven't had snake, but hopefully that will change this summer - my...

Skip the lutefisk and go right for the Surströmming. :)

I brought all my grain up from the basement Wednesday night. We were evacuated Thursday afternoon. Been staying at my gf's and just came back this morning. I got lucky. The black asphalt in the bottom right hand corner is my driveway. Guess that's what I get for living in a village called Riverside.

    Acetaldehyde and bigger beers

Acetaldehyde is a precursor to ethanol in the fermentation cycle. So you're probably not pitching enough healthy yeast in your fermentations. If this is the cause, it won't go away unless there's active yeast. Acetaldehyde can also develop through oxidation - ethanol can convert back to...

    Design an IPA!

That's cool - I know everyone has their own preferences. I just think that that much crystal is going to take away from the already little amount of hops present.

Word! Mine was Columbus/Simcoe/Zythos! Best IPA I've ever made.

    Design an IPA!

That's way too much of a darker crystal, not nearly enough aroma hops, and Magnum isn't that great of a dry hop.

    Too much Corn sugar

Haha, having an 8.5% beer on tap isn't the best idea! I just carbed mine up and it's on now - hoping to get around to bottle it eventually, but it's so easy to pull a sip here and there. My gf loves it, too - but really dangerous for both of us! I did a Belgian Blonde recently that basically is...

Bought some Zythos in the last hop buy and agree that it's a great hop.

    Too much Corn sugar

Meh, watch those fermentations temps and you'll be good to go. You basically just added an extra pound of sugar from what the recipe called for (4 lbs corn sugar vs. 3 lbs candi sugar) - but then watered it down back into the gravity you're looking for - you'll be fine. Concerning a lighter...

    Design an IPA!

I'd go for an APA if you only have those on hand. You're looking at 6+ oz of hops for an IPA.

I just picked up the Vienna split. Screw this database! I like it a lot, but I agree. I plugged it in Beersmith around 75l instead of the 60l

Stalled Fermentation? (slow) 1.04 to 1.03 in a week

Probably underpitched, fermenting a little cool for the yeast, and it is on the slower side compared to the average. So yeah, just let it ride.
