    Dry hop

    They fall apart, spread out to cover the top of the beer, and then pretty much float on top. I leave mine in as long as the beer is in the secondary.. usually about 2 weeks.

    Stronger ALC%

    A few years back quite a few of the local brew shops had 55? gallon barrels of muntons extract in their shops. They would rig them up so they would back fill with co2 as the syrup was drawn. Maybe their suppliers setup is something similar.

    Hydrometer - Need help urgently

    I ferment 5 gallons in 6 1/2 gallon carboys. I like to get an idea of what the starting gravity is to help me decide whether I'll need a blow off tube or whether an air lock will suffice. If the reading is 1.050 or above I use a blow off tube... below that I usually don't bother.

    I keep an eye on my secondary until zero bubbles are coming out of the air lock then I wait for about 2 weeks after that before kegging or bottling. The advice about taking a gravity reading is a good one especially if you know where it should end up.
