    How do you fine tune your recipes?

    You can always do it the way you did the first time and compare the two side by side. Provided you have some left of the original once the second one is ready. That way you will gain a better grasp of your procedures, system, etc. Then of course change one item, i.e.; amount, type or time, and...

    If my OG was higher than expected, will my FG be higher than expected?

    Have you checked the hydrometer? It could read 0.006 higher then actual. I know I have a couple that have had the little paper inside slip a bit.

    Giving up on testing the gravity

    Make sure your hydrometer is reading correctly, and any temp corrections have been made. Keep tracking each brew to see if it is consistent, then you can begin to make adjustments to the recipe depending on your efficiency.

    a couple of spray bottles, one for star san and one for foam control and some oven mits, somewher along the way something will be hot.

    Just keep it in a warm place in the winter, don't want to freeze and split a tube.

    FWIW, my friend and I have bottled to growlers for the last dozen brews or so without incident.
