    What's the equal amounts of LME to DME? I'm supposed to use 3 lbs of LME but would rather use DME.

    Everytime I get impatient I'm reminded when I taste a young beer. Put it down! Unless it's wheat, I let it sit at least a month in a secondary.

    Went Boy Scout camping with my son the whole weekend, crashed through the door Sunday and grabbed a nice Peaches & Cream and finished the evening off with one of my 22oz Nut Brown's.

    Don't go completely by how it tastes after the fruit. Mine had a much stronger peach smell/taste while I was racking into the 3rd carboy, it will mellow with age.

    I racked my Cream Ale onto Peaches for 4 days, I'm drinking it now and while it's very good I could've left it on there for a few more days. There isn't much of the peach flavor coming through. And yes, rack into a 3rd to clarify it.

    Did you use an extract? That could be one reason why it's darker. Lot's of reasons could be why it's more flavorful. Different temps while fermenting. Hops and how long they were boiled.

    My guess is, you're using an extract kit which really wouldn't need to be aireated all that much since you're dumping in a few gallons of fresh water and while a yeast starter is good it isn't needed. Your yeast will just take longer to begin fermenting. Between 24-48 hours. Since this is a...

    My Nut Brown I made awhile ago has an odd aftertaste I just can't put a finger on. It's drinkable but everytime I drink one I can't enjoy it because I'm spending the whole time trying to figure out what the hell that taste is. I think my ferment temps got a little too high.
