    Independence makes a few good beers. :) I got introduced to them at a beer festival we had over the last summer. I've never done any beer tours in austin. If I was going to visit anything in the vicinity it would be Shiner. They're about 2 hours south/east.

    A boil is a boil dude, it's just a matter of evaporation rate at that point. Once my wort gets a bubblin I turn my burner down until it's just sort of 'rolling' the surface of the beer around.

    Campden tablets (used for wine) neutralize chloromines. You have to be careful to not use too much, it's Potassium Metabisulfate if I remember right and your yeast wont do jack-diddly if you go overboard with it...

    Well PBW is Caustic..backflushing hot PBW through the Shirron (or Therminator) should be adequate. :) There are a few folks that have jammed theirs up when their screens fell off their spigot or whatever.. they simply backflushed them into working condition again :)

    Chill haze is caused by protiens that are in suspension .. other then that I can't help. It *SHOULD* settle out with time anyway... and fwiw, clear beer (by most peoples opinions) is overrated. I had a badly hazed holiday ale thanks to the cinnamon powder, I used gelatin to clear it in bulk..
