I used foil for the first time this weekend. It worked pretty well.
Next time I'll poke holes in the foil. The wort wanted to flow out one direction more than the other.. while this wasn't a big deal.. it would be nice to have it sort of 'uniformly' redistribute itself.
Scaling up all the malts can be a pain. Especially the specialty malts. You end up with oddball weights.
Just bump your base grains up, I say. Unless there is a HUGE jump in the weight I wouldn't concern myself with upping the specialty grains.

DME would worry me, since you are vacuum sealing it.. I'd think that dme would get sucked into the vacuum chamber. Not good.
It would be nice though, I had DME in one of those flour containers (that has a gasket on the lid).. and it turned rock hard anyway! :(
