    Can you stop yeast before it gets to dry and if so how?

    You could let it finish dry, add potassium sorbate to prevent any more fermenting, then back sweeten with more juice or sugar. I think it would be best to let the yeast finish fermenting to avoid off flavors. I could be wrong.

    Chimay, Trappist rochefort...pretty much any of those higher gravity Trappist dubbels. St bernardus Christmas ale, too, for sure. Although I am a year round stout drinker, they are especially good during the winter months. Foothills Sexual Chocolate comes to mind.

    I agree with all of this. Good points. In the meantime, I went and bought a $10 piece of sheet metal and some magnets to rig up a hood I can throw over the controls during boil if I feel uneasy about it.

    Ok, I see. You run the washer while you are filtering the water? That’s a good idea. Would be enough pressure, I assume, for the washer to pull from.

    Does the waste go directly in through a top load? Or is it actually hooked up to the supply line so the machine can pull from it? Interested in making a similar setup.

    Where did you find one under $100? I just started looking at RO systems this morning and just about pulled the trigger on a $175 one and that is without the DI. I thought that was cheap, until reading your post. That beer looks incredibly tasty, btw.
