    partial mash, how long should I allow?

    Mashing does add a bit of time to the day... 2 more hours is probably a good estimate. All the right equipment will speed things up though. Having an HLT and a boil kettle saves time because you can sparge directly into the boil kettle instead of transferring the wort around between vessels...

    Lots of good responses... I'd say it depends on the yeast as well. I've brewed a few batches with Wyeast 1968 London ESB yeast which they rate as having very high flocculation. Those beers were best after 3 weeks in primary and 2-3 weeks in the bottle, after that they tasted plain and boring...

    When in doubt, let it age...

    If it tasted like Lambic, you had an infection of some sort. Sour flavors only come from wild yeast or bacteria. That's one flavor that won't diminish with age...
