    Wow... the way I mix 'em that would take a lot of rum! I don't see any reason you couldn't pour a bunch of 2 liters into the keg, add a few handles of rum, then carbonate. Just be careful filling the keg so you don't get too much foaming.

    How on earth do some of you go grain to grass in 2 weeks?

    I prefer American IPAs and other hoppy styles as young as possible, while the fruity yeast esters will still complement the flavor hops. 2 weeks sounds perfect for a low gravity IPA or highly hopped pale ale.

    +1 for the blonde ale - light, fruity and drinkable. If your fermentation temp control isn't dead on you might try a Belgian pale but make sure it finishes dry.

    If you're worried about the gravity drop from using some LME, just add a few ounces of table sugar at the end of the boil. Depending on the style it might be great. But I'm sure it will be great without it too. :)

    So you're basically replacing some of the flavor and aroma hops with the orange peel. Makes sense, but you couldn't hurt it by adding more flavor hops. With a mash temp at 155 you shouldn't need extra body. Have you calibrated your thermometer? Those mash temps may not be what you think...

    I don't think I could wait 3 months to drink this one! Your hop flavor and aroma additions will fade significantly in that time. Maybe that was 2 weeks primary and 1 week keg conditioning? Yeast can strip the aromatics from hops, so you're better off moving to a secondary or keg before...
