    Just let it sit till the yeast metabolizes it. I recently had acetaldehyde rear its head with a lager I brewed. Took an extra 12 days on the cake but it completely went away. Keep sampling and don't rack till it's gone.

    So how good are the lagers you are brewing tasting? I brew some lighter lagers that BMC drinkers try which dont scare them away from craft beer and helps them make the transition to better beer.

    I brew a starter beer to build yeast for my lagers. Make a starter for a 1.042ish hybrid and brew/ferment a steam type beer at ~60F. When that batch is done, rack to secondary and brew/pitch the maibock on the cake at ferm temps or wash the yeast and pitch it.
