I came across that myself, I guess you need to pull the tap coupling o-ring in order to get the shuttle and other components out.

you can always slow the flow down by putting a ball valve on the output side of the pump. I would be more concerned on what material the pump head is made of and whether you can put warm / hot liquids though it without leeching being an issue.

My vote would be to introduce a external temp controller, its a twenty dollar problem. Plus you will easily be able to adjust your temps in the future.
