    My daughter is just under 2 so it's hard to get away for 5 hours or so to brew, my wife also enjoys brewing so its hard to ask her to just watch her while i brew. So here is what I do for my boil and all three of us and our dogs just spend the day outside.

    I also have a batch of SP going right now. My LHBS recommended using white wine yeast because of what the Doc said above. Mine took a day to get going but is seriously going hard now.

    Thanks guys. That leads me to a more complex question. If I need to increase the volume out of my MT do I need to increase the amount of grain to keep on par with a recipe? Or could I just increase the volume of water to make my after boil volume correct?

    Hey I know this seems like a basic question, but do you use a pot lid on your bk? The guy who taught me how to brew never did, so I didn't. But I modified my burner to fit and support my keggle better. It works great, a bit to great and I had more boil off than I expected even on very low heat.

    Great points, but I keep going back to the fact that when the British first created this style they didn't have all of the hybrid types of hops we have today. They just added more hops so the beer wouldn't spoil on the way to India. Im just guessing that the hops they did have we're close to...

    Carboy size

    Currently do 5 gallon batches and I have a 6.5 gallon carboy and a 5 gallon MT. I'm considering doing more half batches so that I can have more types of beer more often. The MT should work great but, Do I need to buy a smaller carboy or will the 6.5 be ok for a 2.5 gallon batch?
