I use the same boil coil in my kettle and usually have somewhere between 7-8 gallons of wort at the start of the boil. I added a 120v induction plate to give it the extra ummph to reach a rolling boil. Works great and was not expensive.

I wouldn't. I made a paddle out of maple and left it untreated; going on 3 years and it still looks great with just a hose down after brew day. Mineral oil is a non-drying oil and so although it will be saturated into the wood I'm pretty sure it could bleed back out into the mash.

I’ve had problems with cracking lids too. Putting some keg lube on the top of the fermenter before screwing on the lid has provided a reliable seal for me. Before I started doing that I could never get a seal.
