    How much is too much?

I am readying to brew a 5 gallon batch of a brown/black IPA probably this evening. It's for a local tasting/event coming up in early sept. My issue lies in that I am a big hop head. So I am looking at a pretty high (I think) hop profile, but I am afraid I am overdoing it and it will blow out...

    Good morning from Memphis, TN

Hey Dave I'm out in Germantown. Good to see more local people getting into this obsession.. errrr i mean hobby. I'm still a pretty new brewer but always looking for ideas and help.... Good luck with the IPA hope it turns out good!

Memphis Guy... Time to stop lurking.

Man i'm jealous of the setup... I'm in Germantown. Do you do stuff with the local club(s)??

    Brown not quite black "clone"

So I am tinkering around with this. Here's the link to Hopville for the recipe i'm looking at. Will gladly take any critism or ideas from anyone to help make it better. Worried maybe there isn't enough sweetness to balance the IBU's, I'm obviously a big hop head but I want the beer to be...

    Adding Coffee to a Stout

I know someone who did a Russian imperial stout with a pound of Starbucks in a 5 gallon batch. He cold steeped it and I think added after flame out but I could be wrong on the time. I know it was a lb of coffee though.

    Brown not quite black "clone"

I am planning to pick up some grain/dme to do a pseudo clone of the alchemist/stone/nasaki collaboration beer. Basically I am going to try and imitate their base malt profile but going with my own hops based on what I have already. Going to do a 5 gallon batch, thinking of 1 oz warrior at 60...

    keg pressure while on vacation

Last night I kegged a wheat IPA (warrior makes a dandy bittering hop)... blasted it at about 30 psi's for a while while rocking the keg last night, then set it to around 12 psi's before i went to bed and left it on that until tonight. Took a sample seemed "OK", still needs a little more...

    Kegging Question

Yes the sugar tabs are what I had originally planned on using, I happen to have some around the house. Just wasn't sure if i could skip the stop or not.

    Kegging Question

I will be force carbing in the keg. Reason i want to get it in and carbed is so i can bring a couple of bottles with me as we're headed out to my inlaws on vacation and my father in law got me into this hobby..... errrr obsession....

    Kegging Question

Ok so 2 kegging questions. First off I did a wheat style IPA that I brewed 2 sunday's ago (believe that would be the 9th). Yeasties went to work within 6 hours of pitching, and I still had airlock activity going as recently as i think it was tues this week. It's been at about 70* for the...

    Bottling in this crazy heat.

While I wouldn't recommend leaving them outside or anything ridiculous.... I live in Memphis and it's routinely in the mid 90s for weeks here in the summer and I have never had a problem with bottles carbing. I assume you keep your house air conditioned or at least have some fans going to keep...

Looking to make a good chili beer

I recently did a green chili pale ale that came out pretty tasty. I ended up serving it at a local brew fest and it seemed to get pretty good reviews. I shot for a major balance something that the chili wouldn't over power. I went with Centennial for bittering, then used cascade and Mt. Hood...

    Fermentation

What was the yeast? I just did a wheat that I used sb-06. I pitched dry straight into cooled wort at about midnight last Sunday and Monday at 6 am I already had pretty good activity. Seemed to slow by fri/sat I have had it at about 70 all week and today actually saw some more bubbling...

    Missed OG

Update... I checked at lunch was down to around 74-75 degrees.. decided to ditch the towel and grabbed a large container I have that I knew fit the fermentation bucket. Put it in filled it up about 2/3 of the way up the bucket with water and dropped a couple of ice packs in to cool it down...

    Missed OG

I'll check in with him and see what/where they've got anything going on. I know he's judged some home brew stuff in RI in the last year or so, but now that he's no longer a "brewer" I don't really know what he's got schedule wise for tastings and stuff. If I hear of anything down your way I'll...

Newbie Here!! - First Brew - Bock Beer

+1 to what OClair said. The ale yeast you should have no problems as long as you can keep the temps where they need to be (which likely isn't all that big a deal). Oh and RDWHAHB! That's the best advice any brewer can have.

    Missed OG

Well knock on wood so far I haven't had to dump anything... I'm slightly worried about this since the wheat is a little out of my comfort zone but I wanted to do something different than I have been doing. I did a green chili Pale ale about 2 months ago that ended up getting given away at a...

    Missed OG

Yeah I realized i pitched too warm, but yeasties didn't seem to mind given the activity ~ 6 hours later was pretty strong. I'm trying to get it down under 70 as best I can without going to too much trouble. I'll see what it is at later today w/ the towel fan if that keeps it low enough great...

    Missed OG

Wow you guys are good today! I definately think it's just a combination of things, and the steeping of the grains probably the biggest culpret. I had the grains in the water as it heated, but it was probably in the steeping range for maybe only 10-15 min instead of closer to 30 that it...
