    True, but the prob with that is you have to use another bag for every hop addition, unless you plan on fishing the old one out and untying.

    Are these the "best" kits or just most popular? A few on the list strike me as odd if we're talking about making good wine.

    Does it take an extended time over 170 to get tannins? I did a mashout and hit about 180 for 5 minutes or so. Is that long enough to get tannins or should it be fine?

    You put it in the freezer to keep anything from growing in there I presume? Haven't heard of anyone doing that but it makes sense i suppose.

    yes, you want to hit it with enough pressure to seal. may not be ultimately required, but i think it's what many do. then you'll need a spunding valve or something to bleed off fermentation pressure.

    Drink More Mild!

    I made a mild and think i would like the style (b/c i love brown ales), but mine came out kinda crappy. Tastes a little "earthy" in the finish. I think the low abv means less room for error and i haven't made that many beers yet. i'll have to give it another try.
